Steps

  1. Slice peels into thin strips (about ¼” wide).
  2. In a medium pot of boiling water, cook the peel until tender, about 15 minutes.
  3. Transfer peels to a wire rack or paper towel and set in a single layer to dry slightly, about 15 minutes.
  4. In a medium saucepan bring about 1 cup sugar and 1 cup of water to a boil over high heat, stirring to dissolve sugar.
  5. Add peel and boil until peel is very soft, about 45 minutes.
  6. Transfer to a wire rack, separating pieces as needed.
  7. Let dry for about a day to harden, then finish by tossing peels in a bit of sugar to coat or dip in chocolate.
  • Tip: Save the sugar water for a delicious orange syrup!
